📋Additional Daily Notes


Today turned out to be one of those days where nothing enormous happened, yet there were a surprising number of little threads running through it—some practical, some reflective, and some that seemed to connect back to things I’ve been thinking about for quite a while.

There were more ordinary adventures. I went over to the Real Canadian Superstore and discovered that the lottery section was closed, so I went out to the Mobil gas station in front on Ryan Road instead. I bought a $1 Gold Rush ticket and a $2 Blackjack ticket. Neither one won. After yesterday’s $15 Blackjack win, apparently the Universe decided it wasn’t going to finance my retirement through scratch tickets quite yet!

I spent some time today working on my Shaolin Temple Kung Fu project. I’m now into the second practice session, Mental Development, and the exercise is called Shen Xui Gong, described in the workbook as cleansing the mind and body. The practice combines breathing, physical movement and imagination. As I exhale and lower my arms, I’m supposed to imagine raindrops falling onto the top of my head and flowing down around it, cooling my head while warmth settles into my chest, belly and lower body. The idea is to practice this morning and evening for the next 21 days, at least five minutes at a time.

2026-08-30 - eTrike Odometer

Later I was at McDonald’s, and after coming home this evening I took my little electric trike out for another ride. This one produced a couple of genuine milestones. The odometer finally rolled past 10 miles (see photo to the left). Ten miles on a little e-trike is beginning to feel like a considerable amount of territory. Then, shortly before midnight while riding down Willis Road, I put it into third gear and went over 14 miles per hour for the first time. I’m gradually becoming more comfortable with the machine, and tonight was the first time I really opened it up a little.

Food experimentation also took another turn today. I’ve decided that sometime this week I’m going to add black beans to my collection of ingredients. That quickly developed into a much more interesting idea: why not make a thick black-bean vegetable chili specifically to put over one of my baked potatoes?

I already have chickpeas, celery, mushrooms, peppers and carrots, so there really isn’t much more required. The plan we came up with is an Instant Pot chili using black beans, chickpeas, tomatoes, mushrooms, carrots, celery and peppers, seasoned with chili powder, cumin, smoked paprika and garlic. After pressure cooking, I can mash some of the beans and simmer it briefly on Sauté so that it becomes thick enough to sit on top of a potato rather than turning into soup.

And then came the obvious question: what about queso?

Rather than buying a calorie-dense cheese sauce, I discovered I can make my own vegan queso primarily from potatoes and carrots. Cook them until soft, blend them with nutritional yeast, lemon juice, garlic, onion powder and smoked paprika, and thin the mixture with water until it becomes a creamy sauce. Jalapeños or a little jalapeño liquid could give it even more of that queso character.

Suddenly the humble baked potato is becoming something considerably more exciting: a crispy baked potato covered with thick black-bean and vegetable chili, homemade potato-carrot vegan queso, and salsa. If it tastes anywhere near as good as it sounds, this might become another regular meal rather than something that feels like “diet food.”

So today contained a little bit of everything: meditation, Randy Bachman still wandering around inside my head, Shaolin imagination training, losing lottery tickets, Social Security detective work, a new food experiment, and a midnight ride on my e-trike.

Maybe the nicest image to end the day with is that odometer clicking over 10 miles. There was no single spectacular journey that got it there. It accumulated one little ride at a time.

Perhaps quite a few things in life work that way.
