☐✅ 🌞 Today the kids and I slept in after the long drive to Victoria from Courtenay. When we got up we walked to Cafe Fantastico down the street for breakfast. I got a black coffee, each of the kids got a muffin, and my son got a hot chocolate with some toast and jam as well.
We then walked back home and dropped my son off so he could play some video games and drove to Whole Foods for soup supplies. While there we also scoped out a number of gift items. After Whole Foods we drove to Michaels down the street so my daughter could pick up some art supplies.

Back at Kristina’s apartment my daughter and I prepared the shop. We chopped up all the veggies and put them into the Instant Pot with some stock. We then placed some chicken breasts on top and hit “go”. In under an hour we had a hearty soup to last a number of days (see photo to the left)!
Next up was finding a movie to watch while we munched away. We decided upon Mrs. Doubtfire initially, but it would not stream right, so we ended up with “Back to the Future”. My daughter loved it. So much in fact that she said it was possibly her favorite movie of all time. My son retreated to the bedroom about 1/2 way through to play some more video games.
In a bit we decided that we would head out for dinner. My son wanted to eat at the Beacon Drive-In we ate at last night, but itching for a change my daughter decided upon the ole Spaghetti Factory as she really wanted spaghetti. Since we had a hard time finding a parking spot we drove just north of Kristina’s Apartment to the “White Spot Restaurant”. Everyone was happy! My daughter could have her spaghetti, my son could have his burger and brownie sundae, and daddy had his black coffee!
We then drove home and called it a day!
